The Keshik is prepared in early autumn after preparing Bulgur The milk, yogurt and bulgur are mixed well together and allowed to ferment for nine days. Every morning the mixture is kneaded well with hands. When fermentation is complete, spread the stall on a clean cloth to dry.

Finally, rub it well between hands until it is reduced to a powder and then stored in a dry place.
